Curries from the Indian sub-continent were first made popular in UK in the fifties by great cooks like Madhur Jaffrey. This cuisine is now the firm favourite in the UK with well over ten thousand restaurants dedicated to serving curries. Traditionally curries are cooked by adding spices at different stages of cooking, a process called “layering of spices” which gives each curry its unique taste and flavour. However, with the advent of packet mixes and convenience of mass production, this age old tradition was lost as all the spices were put into one packet. At Mza all our spices are packed by hand in separate packets and our recipe card comes with clear instructions on when to add individual packet during cooking hence giving an authentic taste to each recipe.
