Tandoor or the clay oven been used for centuries by the inhabitants of the Hindukash and Karakorum mountain ranges. They started appearing in urban lives in the early 20th century. These ovens which are traditionally heated by coal or wood and in more recent times by natural gas, create intense but very even heat. In the cities they were first used in small Dhabba restaurants to make naan breads and heat water. But they are now widely used in up market restaurants to make kebabs on long skewers.

Each dish serves two people and is tailored to a mild to medium heat, though all come with an optional extra "hot packet" for those who like it hot!
