Kashmir, a land of outstanding natural beauty with snow capped mountains and lush valleys. The people of this land were devastated in 2005 with a worst earthquake of mordern times killing over 80,000 people. Two mighty rivers, Nelam and jehlum, cut through this landscape. As these rivers run down the mountains they grow bigger and bigger by collecting water from melting glaciers and countless natural springs. The beauty of this region also reflects in its cuisine which is based on three main ingredients, Kashmiri Chilli, Sont (Ginger powder) and Fennel. These spices are used more in this regional cooking then anywhere else in the subcontinent.

Each dish serves two people and is tailored to a mild to medium heat, though all come with an optional extra "hot packet" for those who like it hot!

Kashmiri Rogan Josh: Heing (Asafoetida), Black Cardamoms, Cumin seeds, Cloves, Salt, Kashmiri chilli powder, Ginger powder, Fennel powder. Aloo Keema Cutlets: Chaat masala, Amchoor powder, Cumin seeds, Salt ,Chilli powder, Coriander powder, Turmeric powder, Garam masala. Bhunna Gosht: Bay leaf, Green cardamom, Cumin seeds, Salt, Coriander powder , Turmeric powder, Ground black pepper, Chilli powder, Garam masala.

We take every precaution to avoid cross contamination of allergens and you can find the possible allergens in the recipe description and recipe cards. However, some distributors of spices do claim to use the same facilities to handle nuts, peanuts, sulphite, sesame, mustard, celery and gluten, etc. So please avoid these recipes if you suffer from these allergies.
