This recipe makes a dry creamy sauce. It is tailored for mild to moderate spice but also comes with an extra packet to make it spicier.
Piaza means “made from onions”. This dish celebrates the onion, a vegetable without which South East asian dishes will most likely not exist. This is a meat stew which is cooked with extra onions to give it a slight sweet and spicy taste. Best accompaniment is tarka daal or white lentil.
